Allicin is produced from garlic as soon as it is peeled and chopped. The longer garlic sits once it's been chopped, the more allicin it will produce. To get the most allicin out of this recipe, chop your garlic before preparing the other ingredients and let it sit for 10-15 minutes.

Raw and Creamy Garlic Avocado Pasta Sauce
Ingredients
- 1 ripe avocado
- 2 cloves of garlic, minced
- 1 tsp cilantro (if you don't like cilantro, you can use parsley instead)
- 1/2 cup chopped spinach
- 1 tbsp fresh lime juice
- Pinch of himalayan sea salt
- Black pepper to taste
- 1/2 - 1 tsp Sun Chlorella Powder
- A few splashes of filtered water to reach desired consistency
Noodle Recommendations:
To keep this recipe completely raw and add even more nutrients to your dish, try zucchini noodles. You can make zucchini noodles in seconds simply by using a julienne slicer or a spiralizer. You may also use whole grain pasta noodles made from quinoa, brown rice, spelt, kamut or organic whole wheat.
Method
1. Chop garlic, spinach
2. Place avocado, garlic, spinach, cilantro, lime juice, sea salt, pepper, and Sun Chlorella Powder in your blender and blend until smooth. Add water in small amounts to reach your desired consistency. For a thinner sauce, add more water. For a thicker sauce, add less.
3. You're done! If you prefer to have this sauce cold (which can be more refreshing in the summer) chill and let sit in the fridge for 5-10 minutes.
