2 tsp. Infuse Your Mood Eleuthero Loose Lead Tea
1 cup boiling water
1/2 tsp. ground cinnamon
1/2 tsp. ground ginger
2 tbsp. maple syrup
1 1/2 cups oat milk
Add tea leaves to an infuser and place in a teapot. Add boiling water and steep for 3 minutes.
Divide tea, cinnamon, ginger, and maple syrup between 2 mugs. Whisk until combined.
Heat oat milk until simmering. Froth and pour over tea. Garnish with cinnamon and serve.

2 cups unbleached flour1/2 cup cornstarch, sifted
3/4 cup vegan powdered sugar, sifted
1 1/4 cups vegan butter, softened
2 tsp. lemon zest
Preheat oven to 325F and line 2 rimmed baking sheets with parchment paper. In a large bowl, whisk together flour, cornstarch, and vegan powdered sugar. Add vegan butter, eleuthero tea leaves, and lemon zest. Mix with a stand or hand mixer until blended. The dough will be crumbly but should stay together when pressed
Roll dough 1/2 inch thick between 2 sheets of parchment paper. Cut out 2-inch circles and place them on a prepared baking sheet. Bake for 12-15 minutes, or until the bottoms are lightly golden.
Transfer to a wire rack and cool completely.
